I've seen the 1928 model thompson in countles WWII movies, but how much or did they actually use it in the war?

Which one? The military version (horizontal foregrip) was used a lot in the early part of the war, and still in noticeable numbers toward the end. The civilian version (vertical Foregrip) barely ever, if at all (I;m hesitant to say never) There is one photo of a paratrooper in Operation Market garden that had modified his thompson with a handmade foregrip, though.

being the self proclaimed Tommy expert most all models of the Tommy saw action. The 1928 model with both vertical and horizontal grips were used by the Marines and Brits

I do believe the vertical foregrip version saw action in the Philippines during the 1941-42 Bataan campaign.

The 28 with horizontal or front verticle grip would be appropriate for virtually any theater of war throughout the conflict. Less and less common of course as the war went along. The M1A1 of course was the most prevalent version in shear numbers.
