I do a French Resistance impression, and I was wondering if it would be accurate to wear a M43 in the winter to cover my ears, and neck. I don't want to take the Wehrmacht insignia off of it, because I would like to use it for a Heer impression later. So would it be accurate?

A whole uniformed ukrainian SS unit complete with MG's anti tank guns and uniforms defected to the maquis in 1944. As far as i know they retained their uniforms (some were dyed blue) but wore berets.

There is no doubt that assorted field items an clothing would absolutely have been captured and used by resistance fighters. An effort of course would have been made to limit the likelihood of being mistaken for the enemy but a hat even with insignia in concert with civilian clothing would not be a problem typically.
