Should a Waffen SS M35 helmat be black, gray, or green?

very very early re-issue M16 and M18 helmets were black, early M35 were 'apple green', and after that they could have been a wide range of color.....grey, green, camo, tan, etc.

although I painted mine Normandy camo.
Green,Dark Mustard yellow, Dark Brown

It depends on when the helmet would have been painted. For example, there are a big colour difference between grey early war and grey mid war.
