Here, I made this list a while back, I might as well put it here too.
It isn't complete or anything, but it's a start.
M36 or M40 uniform set W/ basic Heer insignia (Shoulder boards, collar tabs, breast eagle). Both used throughout the war. (m42 and m43 for late war, m44 is useless.)
-M36, M40, or M42 wool greatcoat for winter.
-M36/m35 or m40 helmet. Both used throughout the war. (m42 for later as well)
-M34,m41, or m43 field caps. (M43 and m34 seemed more prevalent in photographs during ww2)
-Nov. 39 Marching boots (AKA Jackboots), or german ankle boots w/ gemaschen.(leggings)
-Field gear set:
Black EM leather belt W/ Heer buckle. (painted or silver). Both were used throughout the war. DAK tan web belt for late war.
M31 canteen W/ bakelite or metal conical type cup.
M31 mess tin painted Field Gray W/ Utensils.
Tan Breadbag with sewn on leather tabs and metal dish buttons.
Black leather Y-straps. Was used throughout the war. DAK tan web for late war.
Gas mask canister W/ gas cape bag and gas mask. M38 or the Earlier small model is fine.
Set of black leather K98 pouches.
Flat E-tool with black leather cover, or folding E-tool (klappspaten) W/ cover. (Flat E-tool was used throughout the war)
Kar98K Bayonet W/ scabbard and black leathe frog for attaching to belt. (More populaly attached to E-tool cover.
splinter camouflage Zeltbahn W/ two mess kit straps for attaching to belt.
Tent Peg set and splinter or field grey cover.
Optional* web/leather Assault Frame pack (A-frame) for attaching equipment easier.
OPTIONAL* Pony fur tornister pack for storing personal items and equipment.
OPTIONAL* Tan rucksack for storing items, personal, and standard issue.
