When capturing an enemy soldiers were taught to follow the four S's
Secure, Silence, Segregate and Speed to the rear
Obviously the purposes of segregating was to keep the prisoners seperate so G-2 would have a better chance at effective interrogation as the troops wouldn't be able to compare stories or cook up what they'd say.

wouldn't Segregate be replaced with separate today as Segregate might not be PC in todays society

There were a lot of things said in those days that would be far less PC then that! Segregate was the term that was used. Different then separate in that you were instructed to separate accoding to rank groupings, (Enlisted conscripts from NCO's and NCOs from officers etc.)
One other interesting thing about German captives. All germans carried their Soldat Book. A sort of running record of their service (mini 201 file) It showed pay received, units assigned to, promotions ect. A great deal of intel was readily available from all captives whether they talked or not. Body searches always included pulling out their Soldat Booklet and turning them in to G-2.

I have originals of those maps and others which I sell copies of on Ebay from time to time. (It funds my hobby) In addition to Omaha beach (which are shown) I have Carentan, Ste Mere Eglise and Ste Marie Du Mont (Utah Beach) as well as virtually all of the Ardennes area Bastogne, Malmedy, St Vith etc. they're very cool maps. The Normandy ones were all BIGOT classified as was my father!
