I've bought a new gun with steel pistol grip frame and plate,which the plate was suppose to be wood on real steel. Is there a way to make the steel part look like wood?

If you're good with paint, go to the library and find a book on "faux finishes" in either the Art or Interior Decorating sections (700s shelves.) A very simple finish is to make the grips look like black rubber; paint them flat black first, then drybrush them lightly with gloss black (this finish will need to be touched up periodically.)
If you're better in 3D and have access to a woodshop, remove the metal grips and use them as patterns to make a set of real wood grips from a scrap of walnut or maple.
